The Sovereign is a Belgian bar and bistro committed to celebrating the rustic cuisine and fabled brewing culture of Belgium.
Located in the vibrant Georgetown neighborhood of Washington, D.C., the Sovereign's kitchen is led by Executive Chef Peter Smith, whose classic, ingredient-driven Belgian dishes draw on French, German, and Dutch cooking techniques and traditions. Specially sourced Dutch-style mussels, traditional flammekuchen (crispy flatbreads), and braises and stews such as Smith's Lapin a la Kriek (rabbit braised in cherry beer) and other classic, regional dishes serve as the core of the seasonally changing menu.
The Sovereign features 50 drafts and more than 350 bottles meticulously curated by Beer Director, Greg Engert. From classic Belgian producers to revivalist brewers, as well as international and domestic producers of exceptional Belgian-style ales, The Sovereign offers an expansive breadth of selections that illuminate the flavor-driven, craft-brewed complexity that is the trademark of the very best of Belgian brewing.
